Chicory: Many of the blue Summer flowers blooming along the waysides and highways in North America are Chicory flowers. Confederate troops, during the U.S. Civil War, no able longer get a steady supply of coffee, instead roasted Chicory root. To this day, some folks still add this roasted root to their coffee or, happily, drink it instead of coffee. Far from just a good beverage, the herb delights the body.
